Done right, a low, wide dry-stack structure is surprisingly stable.

Safety callout: A dry-stack BBQ needs a stable, dead-level base, and you should never build it tall enough that the upper walls become top-heavy or unsupported. I’d keep it to 3–4 courses of brick, max, for anything without mortar. Go higher than that and you’re asking for trouble.
This is where a lot of DIYers cut corners, and it’s the one place I’d tell you not to.
Ordinary decorative or “common” bricks are not made to handle direct, sustained fire exposure. They can crack, spall, or in worse cases, pop under thermal stress. That’s not a “might happen” — I’ve seen it happen to a buddy’s first backyard build, and it’s not a fun surprise mid-cookout.
Firebrick vs. standard brick: Firebrick (also called refractory brick) is manufactured specifically to handle extreme, repeated heat cycling without breaking down. It belongs anywhere the fire and hot coals actually sit — the firebox floor and the walls immediately surrounding it. Standard bricks can be fine for the outer, cooler sections of the structure, but keep them out of the firebox itself.

If you’re shopping around, look for dense fire-clay or refractory split firebricks rated to handle heat well over 2,000°F without cracking — that rating gives you real margin, because your fire will never actually get that hot, but the brick won’t be the thing that fails.
Before you touch a single brick, pick your spot. This matters more than people expect.

Important: Never build a BBQ underneath a roof, under low-hanging combustible material, or in any enclosed space. This one’s non-negotiable — I don’t care how good your ventilation plan is.
Here’s the thing nobody tells beginners enough: when you skip the mortar, your foundation has to do the work mortar would normally do. Mortar forgives a slightly uneven brick here and there. Dry-stacking doesn’t. Your foundation is the single biggest factor in whether this thing stands up straight for years or starts leaning after one rainy season.
Remove grass, roots, and loose soil down to solid ground, and create a level footprint slightly larger than your planned BBQ.
Add a layer of gravel or another compactable base material, then compact it thoroughly — don’t skip this step or rush it. Check level in multiple directions, not just front-to-back.
On top of your compacted base, use suitable pavers or a properly prepared masonry surface. The whole footprint needs to be stable — not just the middle.
A crushed aggregate or paver base, tamped down properly, gives you a self-draining, compact surface that resists ground shifting over time. This is one place where spending a little extra effort (or picking up a proper tamper instead of stomping it down by foot) really pays off.
This is the core of the project, so take your time here.
Determine your desired width and depth, then lay out the first course loosely — without fixing anything permanently — so you can check the fit.
Here’s a mistake I see constantly: people build the entire wall structure first, then go buy a cooking grate, only to find out it doesn’t fit the opening they built. Grates come in standard sizes, and if your interior width is even an inch off, you’re stuck either forcing an ill-fitting grate or rebuilding a course.
Buy your cooking grate and charcoal grate before you lay a single brick. Measure them, and let those measurements set your interior footprint — not the other way around. This one adjustment will save you more frustration than almost anything else in this guide.
Position bricks around the perimeter, keeping the front open for charcoal access. Check every single brick with a spirit level — not just the corners.
Build in your airflow now. One thing a lot of dry-stack guides skip: your first course is also where you control airflow. Leave small, deliberate gaps between a few bricks near the bottom of the front or sides — these act as a natural air intake, feeding oxygen to the fire from below. Without some form of bottom ventilation, your fire will struggle to get proper draft and you’ll be fighting it all cookout. This also doubles as your ash cleanout access — a small gap at the base makes it much easier to sweep ash out between uses instead of having to dismantle bricks to clean it.
Pro tip from Andy: Spend extra time getting this first course perfectly level. Every error here compounds as the wall goes up — a quarter-inch of lean at the bottom can turn into a real problem four courses later.
Stagger the joints so no vertical seam lines up between courses — this is what gives a dry-stack wall its actual strength. Keep the walls aligned, check level and plumb frequently, and avoid leaving any section unsupported.

Remember — 3 to 4 courses is your practical ceiling for a cement-free build. Beyond that, the structure gets top-heavy and the margin for error shrinks fast.
Your grate needs somewhere solid to rest. A few options:
If your design allows for it, build in more than one grate height — it gives you flexibility for direct vs. indirect heat later, which you’ll appreciate the first time you’re cooking something that needs a gentler touch.
Heat-rated stainless steel L-brackets or heavy-duty angle iron are worth considering here instead of relying purely on protruding bricks — they give you adjustable grate heights without weakening your brick coursing, and they’re not expensive.
Keep the charcoal elevated above the bottom surface — airflow underneath the coals is what keeps your fire burning clean and hot instead of smoldering. Make sure the fire grate itself is properly and evenly supported so it doesn’t tip when loaded with charcoal.
Position it so it sits securely and can’t easily slide or tip when you’re flipping burgers or shifting a brisket around. Double-check there’s enough clearance above the charcoal for the kind of cooking you plan to do most.
Before you light anything:
This one surprises people. Bricks expand slightly when they heat up — even firebrick. In a mortared BBQ, the mortar joints absorb some of that movement. In a dry-stack build, there’s nothing between the bricks to absorb it, so if everything is packed too tightly with zero room to move, the expansion can push bricks out of alignment or, in bad cases, crack them.
The fix is simple: don’t force bricks together edge-to-edge with zero gap, and don’t overload the firebox with a massive fire the first time you use it. Start small (more on that below), let the structure “learn” how it handles heat, and keep an eye on it during the first few cooks. If you notice a brick shift slightly after heating, that’s normal settling — not a failure — as long as it’s minor and the structure stays solid.

Why short and wide beats tall: A tall dry-stack structure has a higher center of gravity and more courses that can potentially shift. A short, wide design spreads the weight more evenly, keeps your center of gravity low, and is just plain more stable without mortar holding it together. It’s less dramatic-looking than a tall brick chimney, sure — but it’s the design that’ll actually still be standing next summer.
There’s no single universal number here — it depends on your specific design. But you can estimate it yourself pretty easily.
You’ll need to know:
Work out the total face area of each wall (length × height), divide by the face area of a single brick, and add roughly 10% extra to account for staggered joints, cuts, and the odd broken brick.
Example calculation: Say you’re building a simple open-front BBQ, 24 inches wide and 18 inches deep, with walls 12 inches tall (about 4 courses using standard 3-inch-tall bricks). That’s two side walls (18″ x 12″) and one rear wall (24″ x 12″), plus a front section shorter to leave your opening. Roughly:
A standard brick face is about 32 sq in (8″ x 4″). That’s roughly 22–23 bricks for the structural walls, before adding extra for the base course, grate ledges, and breakage allowance. I’d round up to 30 bricks to be safe and not end up short mid-build.
Sometimes, but not everywhere. Not all bricks are made to handle direct fire exposure — regular building bricks can crack or degrade with repeated intense heat cycling. Firebrick is the safer, more reliable choice for the firebox and any high-heat zones.
Some standard masonry bricks may be suitable for the cooler, outer sections of the structure, depending on their specification — but don’t assume an old or reclaimed brick is safe just because it’s technically masonry. When in doubt, keep it out of the firebox.

When temperatures drop below freezing, that absorbed water expands as it freezes — and that expansion can crack bricks or push your gravel foundation out of level over a winter.

The three things that matter more here than in a mortared build: your foundation, your brick selection, and keeping the walls low. Get those right and everything else falls into place.
