    Reverse searing is a cooking method that will change the way you eat steak forever. It combines the juiciness of a rare piece of meat, with the delicious charred crust from well-done cooking.

    What is Reverse Sear?

    We all know the standard way of cooking a steak: throwing it raw onto the grill. However, there is a problem with this method. The outside of the steak cooks significantly faster than the inside.

    At 275 degrees the steak will need to sit in the oven for around one hour. While the oven is preheating it’s time to season your steak. We prefer a liberally seasoning with salt and pepper on both sides.

    However, if you want to mix up the flavor, then add chili powder or steak salt. Place the steaks on a cooling rack and place the rack over a sheet tray. The juices from the steak will drip down onto the sheet, so put down foil for some easy cleanup.

    Then place the steaks into the heated oven. Cook the steak until they reach an internal temperature range between 125 and 140 degrees Fahrenheit. A 125 degree Fahrenheit steak will be closer to rare doneness, while 140 degrees Fahrenheit will be more well done.

    Once they reach your desired internal temperature, take the steaks out and let them rest for at least fifteen minutes. While you wait, heat your grill, cast iron pan, or skillet until it’s roaringly hot.

    Then, throw the steak on and cook for one minute on each side, or until a nice crust forms. Serve the steak immediately after searing.

    Cooking Tips

    Try salting your steak heavily the night before you serve it. Simply lay it on a rack with a tray, salt both sides, and put it in the fridge. This allows the seasoning to penetrate through the cut of meat.

    If you’re going to reverse sear, make sure you always use a big cut of meat. Slices that are smaller than 1.5 inches in height will become overcooked if you try this method.

    We highly recommend a bone-in ribeye for the best reverse sear experience. If you’re using a grill, then make sure it heats up fully before putting the steak on it. Using a grill that isn’t fully heated is one of the most common mistakes that new grillers make.

    All of the recipes are easy to follow, so if you are a beginner you do not have to worry about not being able to cook these meals to perfection! We have provided you with three very different recipes to appeal to a wide range of people!

    Texas Style Smoked Brisket

    Smoked brisket is fantastic and is something that is guaranteed to make your family and guest’s mouths water.

    Our recipe is a Texas-style smoked brisket that will take an already great tasting brisket to the next level.

    What You Will Need:

    • Beef Brisket (this can be whatever size you would like and depends on the number of people you will be serving)
    • Sea salt
    • Black pepper
    • Other seasonings (although you only need salt and black pepper for a Texas smoked brisket, feel free to add any other seasonings you like)
    • Butcher paper or foil
    • Meat thermometer
    • Large chopping board

    Method

    Step One – Place your beef brisket on a chopping board and cut off any excess fat that you do not want to cook. This should take around ten minutes to do so. You do not have to trim any fat off if you do not want to.

    Step Two – Next you will want to season your brisket with salt and black pepper. If you prefer your brisket to be plain that is fine. If you want it to have the classic Texas flavor ensure the meat is well seasoned on both sides. You can add extra seasonings, such as garlic if you want.

    Step ThreeWrap your brisket in butcher paper, ensuring that it is completely covered. Although butcher paper provides the best results, you can use foil if you prefer. The butcher paper or foil will lock in the flavor of the brisket and help it to stay nice and juicy. While you do not need to wrap your brisket, we think it provides the meat with extra flavor!

    Step Four – Place your wrapped brisket into your smoker at a temperature of around 230℉ for around 5-8 hours. Although it does take a while to cook, trust us, it is worth it!

    Step Five – As your brisket is cooking, you will want to check the internal temperature every few hours using a meat thermometer. The internal temperature of the largest part of the brisket needs to reach a temperature of at least 202℉ before it is safe to consume.

    Step Six – Once your meat has reached at least 202℉ take it off the smoker and allow it to rest for a little while before serving. This allows the meat to cool slightly and for it to taste its best. After it has cooled a little, it will be ready to serve.

    You could serve your brisket with some homemade potato wedges and vegetables cooked alongside the brisket in the smoker, for a delicious meal.

    What You Will Need:

    • 1 whole chicken (or multiple, depending on how many people you are serving)
    • 3-4tbsp salt
    • 2tbsp pepper
    • 2-3tbsp garlic
    • 3tbsp brown sugar
    • 3tbsp paprika
    • 2tbsp cumin
    • 3tbsp onion granules
    • Barbecue sauce
    • Meat thermometer
    • Large chopping board
    • Spritz bottle
    • Mixing bowl
    • Olive oil

    Method

    Step One – First you will want to mix your salt, pepper, garlic, brown sugar, paprika, cumin, and onion granules in a bowl. We have given rough estimates above but feel free to add more of your favorites if you prefer.

    Step Two – Place your whole chicken on a chopping board and lightly cover it completely in olive oil.

    Step Three – Coat your whole chicken with the seasoning you have mixed. Apply a generous amount, ensuring that all of the chicken is coated well. The oil will help the seasoning to stick to the chicken.

    Step Three – Place your chicken into the smoker at a temperature of around 250℉. You will want to cook the chicken on a steady heat for around 3 hours. The times may vary according to the size of the chicken, how many chickens you are cooking, and the type of smoker that you own.

    Step Four – Every half hour to an hour you will want to lightly spritz your chicken to keep it moist and juicy.

    Step Five – You will want your chicken to reach an internal temperature of at least 165℉. Do not remove the chicken until it reads this temperature on the meat thermometer as it will not be safe to consume.

    Step Six – Once your chicken has reached a safe temperature. Let it rest for a short while before cutting and serving it. Serve your chicken with your favorite barbeque sauce to enhance the flavor.

    What you will need:

    • ¼ – ½ cup of Butter
    • 20 – 30oz of cheese
    • 3 – 4 cups of milk
    • 1 box of Macaroni pasta (around 1lbs)
    • ¼ – ½ cup of Flour
    • 9oz of Cream cheese
    • Two pans
    • Gas/Electric Hob
    • Aluminum tray or heatproof dish

    Method

    With this recipe, you will need access to a hob for the first section of cooking.

    Step One – First you will need to empty your macaroni pasta into a pan and cover the pasta with water. Place the pan on a medium heat on the hob and cook for around 8-10 minutes, or until soft.

    Step Two – While your pasta is cooking, place your butter and milk into a separate pan and warm up on medium heat for 3-4 minutes.

    Step Three – Once your milk and butter have warmed up, you will want to add in your flour. Use a whisk to ensure that the flour does not clump. Leave to simmer and stir frequently for 2 minutes or until your mixture has a thicker consistency.

    Step Four – Add in your cream cheese and keep stirring the mixture for another few minutes until the cheese has melted into the mixture with no lumps.

    Step Five – Add your grated cheese to your sauce mixture. You will want to add the cheese slowly to help with the mixing process. Keep stirring on a low heat until all of the cheese has melted.

    Step Five – At this point, your pasta should be ready to drain. Ensure it is soft and cooked through, and drain the water from the pasta.

    Step Six – Place your macaroni into a heatproof dish or aluminum tray that is suitable for use in a smoker. Next, you will need to pour your cheese sauce over the pasta, ensuring that it is all mixed in well.

    Step Seven – Before you place your macaroni cheese in the smoker, feel free to add any extras to it, such as seasoning or even bacon. You can even add a layer of cheese over the top to make it extra tasty if you want.

    Step Eight – You will want to cook your mac and cheese in the smoker for around one and a half to two hours, depending on how crispy you want it to be. The temperature of your smoker should be around 230℉.

    Before eating, ensure the mac and cheese is piping hot and any added extras are cooked thoroughly. The mac and cheese will have a deliciously smoky taste!
